Okay here goes. Chicken Chili(long).

My wife took the info from Calhoun's and added this and that.
2 pounds of skinless boneless chicken breasts, cut into bite sized pieces after boiling.
2 cups of finely chopped onions
2 garlic cloves minced
2 teaspoons of ground cumin
1/2 teaspoon of dried oregano
1 teaspoon of ground coriander
2 4.5 cans of chopped green chilis undrained
1 cup of water
2 15.5 cans of cannellini beans rinsed and drained
1 can (14) fat free low sodium chicken broth
1/2 teaspoon hot pepper sauce

Toppings after chili is done:
Monterery Jack Cheese
Chopped green onions
Chopped fresh cilantro

Boil chicken. Cut into bite size pieces. Heat a large Dutch Oven over medium heat and coat with cooking spray. Add onion and saute for 6 minutes till tender stirring frequently. Add garlic and saute for 2 minutes. Stir in cumin, oregano and coriander, saute for 1 minute. Stir in green chilis, reduce heat to low and cook for 10 minutes partially covered. Add the chicken, water, cannellini beans and broth. Bring to a simmer. Cover and simmer for 10 minutes. Add the hot sauce and stir. Top with above ingredients of choice. You can thank me later.
