I saw this guy Michael Character compete on BBQ Pitmasters and they said he had a restaurant in Adairsville. Anyhow, since I live in Chattanooga, I would check it out since it’s reasonably close. I did my research before going: The menu is simple, the restaurant is simple and his smoker is simple. I was sold because fancy and bbq don’t go together. On to the review: the meat was tender- pork, chicken, and beef- solid A, the ribs- tender but not fall off the bone, great smoked flavor but just a tad bit spicy for my taste(personal preference here but i’m A total puss when it comes to anything spicy- A-. The sides- Baked Beans, potato salad, slaw- that’s all they offer but all were good-B plus, sauce- sweet with some spice- again, personal preference here-B plus, value for the money- excellent, very reasonably priced- A.
At the recommendation of a fellow Volquester, I will be trying Dubs in Calhoun, GA next. With review to follow. Still searching for the perfect BBQ, which is like searching for the holy grail but Character’s is definitely worth going to.
