OT - '66 Mustang resto help

My dad lives in Maryville and he has been restoring this car for 15 years or more. He's 84 now and doesn't have the energy to finish. He did a disc brake conversion last year, with some help.
The only real thing to complete is the interior, which he has everything to do it. There's no way he can do that inside the car. I moved away after college and can't get down very often.
I'm trying to get him to just take it somewhere to finish so he can at least enjoy driving it instead of working on it.

Does anyone have a recommendation of a place to have it worked on in Blount county? The car is driveable now, but he doesn't like to drive it because it isn't finished.
