Restaurant Etiquette Question

The most expensive item thread had me thinking of a huge argument I had with some co-workers a few months back. I was always taught if you're hosting someone or a group of people at a restaurant and you offer to pay, it was rude to look at the bill before you slipped your credit card in the holder. My grandfather told me it was rude, just place the card in the holder, and when the bill comes back, calculate the tip and endorse the bill. Every one of my co-workers thought that was insane.
